It's not exclusive to Turks. They do it all over the world. Even in the poorest and most conservative African countries they spend billions and billions of dollars in promoting these kinds of ideologies. Chuds often talk about African birth rates being higher than white birth rates, but they fail to notice that their birth rates are also rapidly decreasing. It's just less noticeable because they're still in a stable stage.

Anyway, to answer the question, they target Turkey and the Turkish government a lot because even if euros hate us, they still realize that they need us. Turkey is a very powerful country in terms of military strength. Plus, having a puppet government in Türkiye would allow the european union to more easily have influence over all the caucasus countries.

Of course, if Turkey were to actually fall under european influence, I don't think Russians and Iranians would tolerate this. There are claims that both of these countries helped Erdoğan stay in power during the 2016 coup attempt. I think such an event would signal the coming of a world war.
