My favorite is The Old Man and the Sea by Ernest Hemingway. It's a simple story that portrays the battle between man and struggle in a raw and honest way. Despite reading it 12 years ago, it remains fresh in my mind as if I read it yesterday.

Wish I had the attention span to read more. I did enjoy LOTR despite never finishing it.
Speaking of having the attention span to read more when it comes to fantasy, I liked reading Warhammer. There was this book that was quite enjoyable called the Blood of Aenarion that I never got around to finishing.

My favorite book, however, is called The Alchemy of Happiness by Al-Ghazali. It's a thought provoking read, especially when it comes to how we perceive life itself and our souls.

Would it be interesting for a non-religious person to read?

Yes. Even thought it delves into religious topics, it still teaches good lessons and life advice that'd be useful even if you're not religious. PDFs for it can be found pretty easily online and it's not a long read at all.

Lately, I've been reading Meditations by Marcus Aurelius. It’s a collection of personal reflections written by the Roman emperor. I’ve been taking my time with it, reading and re-reading a passage or two before moving on, as it is a deeply meditative kind of literature that requires your full attention.
