even doe mods are just bloat that distract from minecrafts simplicity and we only need a couple good plugins

To respond seriously I think it's a distraction/bloat because online minecraft is a social experience. Mods are kind of a single player experience, the joy in multiplayer isn't increased complexity or further grinding or novelty seeking, it's the social aspect. It's about cooperation, competition, larp and fucking around more so than engaging with game progression. I think adding mods would take away from the social aspect and push people more into autistic mod grind isolation. I also think minecraft has a power creep problem as is, no need to exacerbate it.
This becomes worse by the fact that a lot of the mods have no relation to each other, compared to some modpacks that are basically a romhack you play with friends.

i find adding mods just a way to refresh the gameplay and add more fun shit to do, we can add them and still have a good social experience but having the same items everytime just gets kind of stale and we mostly know what they do by now, plus nucraft items are gay grind shit
i say this everyday in front of the mirror
don't know shit about minecraft mods but just don't make it too bloated (>5 mods) and they should be interesting
